Looking for a delicious healthy snack full of flavor? This granola recipe is sure to curb your cravings and add the right amount of crunch made with locally grown Kentucky chia seeds! If you have a little extra time one night for a tasty treat, give it a try!

Makes 5 Cups

INGREDIENTS: 

  1. 3 cups – flaked unsweetened coconut 
  2. 2 cups – roughly chopped nuts of your choice 
  3. 2 tablespoons – Heartland Chia seeds 
  4. 4 tablespoons – melted unsalted butter 

DIRECTIONS:

  1. Preheat oven to 275°. 
  2. In a large bowl, add dry ingredients. 
  3. With all the dry ingredients mixed, slowly add melted unsalted butter. 
  4. Toss until mixture is well coated. 
  5. Spread on a parchment lined sheet pan and bake about 20-25 minutes until coconut is browned (tossing mixture halfway through). 
  6. Let cool before enjoying. 
  7. Serve on top of your favorite yogurt, enjoy with low fat milk or just eat it straight from the pan! 

For an extra treat: Toss in 2 tablespoons of dark chocolate chips before baking…Yum!
