Makes 5 Cups
INGREDIENTS:
- 3 cups – flaked unsweetened coconut
- 2 cups – roughly chopped nuts of your choice
- 2 tablespoons – Heartland Chia seeds
- 4 tablespoons – melted unsalted butter
DIRECTIONS:
- Preheat oven to 275°.
- In a large bowl, add dry ingredients.
- With all the dry ingredients mixed, slowly add melted unsalted butter.
- Toss until mixture is well coated.
- Spread on a parchment lined sheet pan and bake about 20-25 minutes until coconut is browned (tossing mixture halfway through).
- Let cool before enjoying.
- Serve on top of your favorite yogurt, enjoy with low fat milk or just eat it straight from the pan!
For an extra treat: Toss in 2 tablespoons of dark chocolate chips before baking…Yum!
